Mango Stir-fry

– 2 cloves garlic, minced

– 1 tbsp minced fresh ginger

– 1/2 cup diced celery

– 3/4 cup diced carrots

– 1 red bell pepper, seeded and diced

– 1 cup broccoli florets

– 1 cup chopped mango

In a large skillet over medium heat, add a splash of water along with garlic, ginger, celery, carrots, red pepper and broccoli. Cover and cook until soft, stirring every few minutes and adding more water as needed. Add mango and cook another 2-3 minutes. Serve with brown rice.
