Ginger Cake

Ginger Cake

–  1 cup brown rice flour

–  1/2 cup millet flour

–  1/2 cup tapioca starch

–  1/4 cup coconut sugar

–  2 tbsp minced fresh ginger

–  2 tsp baking powder

–  3/4 tsp ground ginger

–  1/2 tsp allspice

–  3/4 cup mashed sweet potatoes

–  1/2 cup maple syrup

–  1/4 cup molasses

–  1/4 cup water

–  maple butter (optional)

Preheat oven to 375. Line an 8” square pan with parchment paper. In a large bowl, whisk together dry ingredients. Add sweet potatoes, maple syrup, molasses and water and mix with a spatula until well combined. Transfer to prepared pan and bake 35 minutes or until firm to touch. Let cool completely before frosting with maple butter.
